Princess Sandwiches

Princess Sandwiches

Chop sufficient cold chicken to make a half pint [1 cup], add the juice of half a lemon, 2 tablespoonfuls of melted butter or olive oil, 12 walnuts chopped very fine [24 walnut halves], a half teaspoon full of paprika and a half teaspoon full of salt. Put this mixture between thin slices of buttered bread, trim the crusts and cut into fingers.

It’s a little salty as written, but you can easily use half the salt, and adjust to taste. I used my vintage food chopper because I could, but really a knife works just as well.

These are absolutely delicious. A bit salty, but that’s easy to adjust. Surprisingly filling. I honestly recommend
